Broccoli Stems With Peas
1) Slice and discard the thick outer skins.
          Peeled and Sliced Broccoli Stems - 4 Cups 
2) Heat a nonstick skillet sprayed very lightly with olive oil over medium heat. Add the broccoli and 1/2 cup of orange Juice. Cover and simmer for 5 minutes. 
                                 Orange Juice - 1/2 cup
3) Add the Peas, Scallions, remaining Orange Juice, and the Marjoram and cook uncovered for an additional 3 to 5 minutes. Serve topped with Parsley.
                               Orange Juice   - 1/2 cup
                     Frozen Green Peas   -  4 Cups
            Scallions incl green tops   -  8
                                      Marjoram   - 1 tsp
              Fresh Parsley Chopped   - 4 tsp

    Broccoli stems are loaded with Vitamin C. Thy make an excellent addtion to any stew or casserole, and can be served independently as in this recipe.  Once cooked, the Broccoli stems are a delicacy similar to Artichoke Hearts.
